For a bulk eye-round enquiry, describe the intact muscle, trim and size range your receiving line needs. The Canadian Food Inspection Agency’s wholesale beef reference, item 171C, identifies eye of round as the boneless semitendinosus, separated along the natural seams, with neither end severed. Use that reference to clarify the cutting discussion; it does not certify an offered Brazilian lot or establish destination approval.
Match whole-muscle dimensions to the slicing programme
Tell us whether the meat is intended for roasting, portioning, chilled slicing after cooking or further processing. Request a cutting photograph or diagram and agree how the ends are treated. If your operation needs shorter portions, identify them separately from an intact-muscle specification. Compare the topside and knuckle alternatives against the same application rather than assuming the cut names are interchangeable.
- Specify acceptable piece-weight and length ranges, and whether limits apply to every piece or an agreed lot sample.
- Agree external fat and surface-membrane removal, permitted cuts or gouges, and any remaining connective tissue.
- Identify whether grading, age or other production attributes are required and request evidence applicable to the offered lot.
- Record how out-of-range pieces and mixed-size cartons will be assessed before shipment acceptance.
Confirm packing and the net-weight basis
Ask which individual wrapping, vacuum packing or other packing arrangements can be offered. State whether pieces must be separately removable or whether a block-frozen presentation suits the process. Confirm pieces per inner pack, carton net product weight, variable-weight labelling, carton dimensions and pallet requirements. Keep packaging tare separate from meat weight and reconcile the packing list with the proposed carton count. A catalogue photograph is a product reference, not a guarantee of the supplied trim, pack or available stock.
Plan cold-chain receiving and documentation
Request the lot’s agreed storage conditions, production and freezing dates, shelf-life basis and handling instructions in the written specification. Arrange the receiving check before the load arrives: review transport-temperature records, pack integrity, carton identification and the agreed weight sample. Isolate discrepant cartons for review under your food-safety procedure; do not treat a photograph or a single temperature reading as complete acceptance evidence. Thawing and processing arrangements should follow the offered product instructions and your validated operating procedures.
Provide the destination country and port so the team can assess the offered production establishment, market eligibility, sanitary documents, origin records and labelling requirements. State any Halal or other certification requirement explicitly and request evidence covering the particular source and programme. Listing this product does not establish approval for every destination.
Send an eye-round purchasing brief
Include the cut definition, trim, size bands, packing, trial and repeat quantities, shipment window and named FOB, CFR or CIF place. Use the frozen-beef buyer guide to align the comparison, browse the hindquarter selection, then send your specification for review. Availability, origin, documentation, packing and final commercial terms remain subject to the written offer.
