Download product data sheet 3 pages · Fill, save and return by email.A frozen pork carcass programme is a purchase of a defined dressed presentation, not simply a weight of pork. For wholesale cutting and processing, agree what is included, how each carcass or side is weighed and what your receiving operation can handle. SAI Agro Brazil reviews the requirement with the relevant supply source; availability and the final specification are confirmed in the written offer.
Define the dressing before comparing weight bands
State whether you need whole carcasses or split sides, then specify the treatment of the head, feet, skin, kidneys, internal fat and other included or removed material. A single commercial name does not settle those details. The CFIA pork nomenclature, item 400, for example, describes a particular dressed, split carcass and distinguishes it from a whole roasting pig. Use an agreed description or diagram, with your required deviations written down; this reference is not a claim that our offered product is certified to that specification.
Make the weight basis useful to your cutting team
- Unit of sale: identify whether the stated band applies to a whole carcass, an individual side or the combined pair of sides.
- Weighing basis: request the net product weight, the weighing stage and the treatment of wrapping or separately packed material.
- Variation: agree the acceptable range, tolerance and how any out-of-band units will be handled.
- Load reconciliation: ask how unit counts and actual weights will connect to the packing list and commercial invoice.
Assess usable output against your own cutting plan and the agreed dressing. Do not assume that a quoted carcass weight produces a guaranteed quantity of saleable cuts, or compare it directly with the price of a prepared six-cut pork assortment.
Plan wrapping and frozen handling together
Request the freezing presentation, protective wrapping, unit dimensions and proposed pallet or loading arrangement. Describe your unloading equipment, storage configuration and how frozen sides will move to the cutting operation. Confirm that the wrapping and load plan fit the receiving facility before accepting the shipment programme.
Obtain the offered product’s storage instructions, shelf life, minimum remaining life at arrival and required transport-temperature records. At receipt, reconcile unit identity, weights, wrapping condition, lot codes and available temperature evidence with the agreed documents. Set an inspection window and a documented discrepancy procedure; thawing and processing should follow your approved food-safety process.
Confirm the source and destination documentation
Ask for the proposed production establishment, traceability basis and evidence needed to assess eligibility for your importing market. Agree the sanitary documents, label language and any buyer-specific inspection or testing requirements for this product and source. Catalogue inclusion does not confirm a market approval or a shipment certificate.
Send a carcass-specific purchasing brief
Include the whole or split presentation, dressing schedule, unit weight bands, quantity and purchase frequency, wrapping, shipment window, destination port and preferred trade term with the named place. Mark essential requirements and acceptable alternatives. Our pork shipment buyer guide helps you coordinate the schedule and approval responsibilities. Send your pork-carcass brief for an individual written offer, or compare pork trimmings for a different processing requirement.
