Download product data sheet 3 pages · Fill, save and return by email.Boneless chicken leg needs a clear source-cut and presentation brief before two bulk offers can be compared. State whether you require deboned whole-leg meat, thigh-only meat or an agreed combination, then describe the skin, trim and piece format your receiving operation can use.
Confirm what “leg” includes
The CFIA chicken wholesale nomenclature describes whole leg, item 71001, as thigh and drumstick, and describes thigh separately. This is a useful vocabulary for comparing supplier descriptions; it does not establish that an offered Brazilian lot follows a Canadian specification or is eligible for that destination. Ask for the source-cut description, a representative photograph and the proposed written specification.
Make clear whether the thigh and drumstick meat must remain as one deboned presentation or may be supplied as separate pieces. If a mixture is acceptable, ask how its composition will be described and whether different source materials may share a carton. Do not treat boneless leg and boneless thigh as interchangeable without your technical team’s approval.
Specify skin, trim and residual-material checks
Confirm skin-on or skinless presentation and describe acceptable attached skin, visible fat, cartilage, tendons and connective tissue. Request the offered controls and acceptance criteria for residual bone or other unwanted material. A general “boneless” description should not replace the inspection and sampling requirements your process needs.
For a representative sample, record which presentation was approved and any agreed deviations. Keep the approval with the dated specification so a later change in skin status or trimming does not leave your production team evaluating a different product.
Match the piece format to the production line
Whole deboned pieces, slices and cubes answer different preparation needs. State the dimensions or piece-weight range, permitted variation and treatment of small fragments if these affect portioning or processing. If your operation requires a cut format, review the separate sliced leg-meat and cubed leg-meat buying routes. A commercial format name alone is not a measurement specification.
Where usable yield or processing performance matters, propose a representative trial under your own approved conditions. Compare the same product preparation and process across samples. Do not infer a guaranteed cooked yield from the frozen weight or a product photograph.
Agree freezing, wrapping and carton identity
- Freezing presentation: confirm whether pieces must separate individually or a frozen block is acceptable to your receiving process.
- Inner pack: state the bag or wrapping requirement, portion arrangement and whether different lots may be combined.
- Carton basis: confirm declared net weight, fixed or variable weight, dimensions and the proposed packing-list detail.
- Traceability: request a sample label connecting product identity, lot code and the accompanying records.
Obtain the offered storage instructions, shelf life and minimum remaining life at arrival. Agree transport-temperature records and the receiving inspection process. Sampling, thawing and handling belong within the receiving operation’s food-safety procedures.
Review the actual production source and destination
Ask which establishment is proposed and what evidence is available for the intended importing market. Confirm required sanitary documents, label language and any buyer-specific inspection or testing before shipment commitments. Where Halal is requested, ask for evidence covering the offered production programme rather than relying on a general company claim.
