A chain-on striploin enquiry should define the attached material as carefully as the main steak muscle. For steak cutting, food service and wholesale programmes, agree a marked cutting specification before comparing price per kilogram. The catalogue name does not by itself establish a standard trim, piece size or yield.

Make “chain on” a shared cutting instruction

Ask the proposed supplier to identify the component it calls the chain on a clear photograph or diagram. State whether it must remain attached along the full piece, whether partial separation is acceptable and what surface or seam trimming is required. Record the agreed drawing version with the written offer. A reference photograph on this page illustrates the product family; the offered presentation needs separate confirmation.

Use a named cutting reference where helpful, while listing any agreed departures. CFIA’s boneless strip-loin description, item 180, distinguishes preparation at the rib and sirloin ends and provides flank-removal options. It is a terminology reference, not confirmation that this chain-on programme conforms to item 180 or has Canadian market approval.

Specify tail, fat cover and piece weights separately

  • Tail or flank edge: give the permitted extension at each end, the measurement points and units. A single unexplained tail-length number may leave the two ends ambiguous.
  • External fat: state the maximum cover, how it will be measured and any permitted variation. Distinguish surface fat from seam fat and the attached component.
  • Piece range: request a weight band for the agreed trimmed presentation, plus the acceptable proportion outside that band. Define whether weights are taken before freezing or on the delivered basis.
  • Steak programme: explain portion weight, thickness and end-piece policy. If both weight and thickness matter, agree their separate tolerances rather than assuming one guarantees the other.

Compare the usable cutting result

A heavier chain-on piece is not automatically a better-value steak input. For a sample trial, agree the preparation, handling and weighing procedure with your cutting team. Record incoming product weight, material removed and usable portions on the same basis for each offer. Identify how your operation will use the retained component and end pieces. Trial results describe that trial; they are not a guaranteed yield for every shipment.

Agree packs that protect the receiving plan

Request the proposed inner wrapping or vacuum-pack format, pieces per carton, carton dimensions and net-weight basis. Ask whether cartons have fixed or variable weights and how individual-piece or carton weights are recorded. Confirm lot coding, label language, production and freezing information where applicable, and the packing-list detail needed to reconcile the load. Packing options and feasible piece ranges remain subject to the written offer.

Storage, eligibility and arrival evidence

Confirm the offered product’s storage instructions, shelf-life basis and required remaining life at receipt. Agree transport records, freezer capacity and unloading arrangements before dispatch. Use your approved handling and inspection procedures for pack integrity, lot identity, product condition and any cutting trial. Ask for the proposed production establishment and destination-specific sanitary documentation; neither a product name nor a sample establishes permission to import. If certification is required, specify the evidence your importing team must approve for the actual offered lot.

Build your striploin purchasing brief

Send the marked chain-on definition, tail and fat limits, piece range, packing basis, quantity, purchase frequency, destination port and shipment window. Our frozen beef buyer guide helps organise the wider sourcing review. Explore the protein catalogue or send your specification for assessment. Availability, grade, origin, establishment eligibility and final commercial terms are confirmed in the individual written offer.

Cut-description reference: CFIA beef wholesale nomenclature, item 180. Applicable destination requirements and the agreed supplier specification take precedence for the purchase.
